Homeless Meal- Thursday 11-19

Hey friends! We're serving the homeless again this week as our class ministry project. I've included the menu, tips and tricks, and a recipe you can use.

Quick and Easy Shepherd's Pie
Ingredients
1 packet brown gravy mix or homemade
1 yellow onion, chopped
1lb ground beef
1 9x13 sheet of pie pastry
4 potatoes peeled and chopped
1 small bag peas and carrots, frozen is fine
cheddar cheese, about 1 cup
Butter, milk
salt, pepper to taste


In a large pan, bring the potatoes to a boil in salted water and simmer until fork tender.
Meanwhile, brown the ground beef and onion together, drain if necessary and season with salt and pepper.

While the beef and onions are cooking, drain and return the potatoes to the pan, and mash with a potato masher. Add in 2-3 tablespoons of softened butter and a dash of milk or half and half until the potatoes are creamy and smooth, but not runny. Season with salt and pepper.

Make the gravy.

Spray a 9x13 pan with cooking spray. Spoon in the mashed potatoes, making a smooth and even layer. Pour the onions and beef over, making another layer. Evenly spread the peas and carrots over the beef mixture, and pour the gravy evenly over the top. Sprinkle with cheese. Cover with the pie pastry and cut vent holes. Bake according to the pastry instructions.


TIPS
*Please use disposable pans.
*If you would like to sign up for more than one main dish slot, a half-size steamer tray will hold approximately 2-2.5 9x13 pans. You will need to approximately double the recipe. We want the steamer trays to be very full so there is plenty for everyone to eat a hearty portion.
*Please load up your salad with lots of fresh veggies, but make sure they are in small pieces. Dental problems make chewing hard or large food very difficult. Please don't dress your salad or add cheese as they make the lettuce wilt quickly.

For those interested in helping out, here's the menu and some tips.

Tips:
Please use disposable aluminum pans.
Please wrap pans tightly with two layers of aluminum foil.
***A Half-Size Aluminum Steamer Tray will hold approximately 2-2.5 9x13 casserole dishes. If you'd like to make a Half-size tray of the Mac & Cheese or the Tomato Cucumber Salad, you will need to approximately double the recipes.

Little Smokies
We need 6 full 9x13 pans.
Plan on purchasing 3-4 bags of Little Smokies, or one large bag from Sam's and Costco.
Heat in a skillet on medium heat until heated thoroughly and the skins begin to crispen.

Mac and Cheese
We need 5 full 9x13 pans.
Plan on purchasing 3 boxes of macaroni and prepare according to the box directions, or make enough homemade mac and cheese to completely fill the pan.

Tomato Cucumber Salad
We need 5 full 9x13 pans.
Plan on purchasing 5 large tomatoes, 2 cucumbers, and 1 small red onion.
Cut the tomatoes and cucumbers into bite size pieces. Chop half of the onion and add to the pan. Pour Italian dressing over the top and sprinkle with black pepper and season with salt. Combine well.

Cornbread
We need 5 full 9x13 pans.
Make your favorite cornbread recipe.

We are also in need of napkins, plates, and forks to serve 75. The average has been about 60 people, but with the weather turning cooler, the numbers may be higher. We like to be prepared just in case. We are also in need of approximately 75 bottles of water.
